Hands-on from Spanish Michelin-starred chefs towards sustainability and excellenceThe event took place on a estero, a natural salt pond where fish and seafood are often trapped. Traditionally, fishermen would catch those fish towards the end of the season, around October, when the fish and seafood had a determined weight and had reached maturity.
